This time of year is one of my favorites with all the colors changing; I can't imagine living in a warm climate all year round. I wouldn't want to miss eating and drinking everything pumpkin. I'm writing this post as I sit and watch "Mission Impossible 2". Yes, I like a good action movie every now and then! It's been a very long time since I've sat down to watch a movie.
Anyway, I've decided to be a little creative in this smoothie; I added turmeric. As you may know, turmeric is an ancient herb that has numerous benefits; high in antioxidant, promotes radiant skin, supports healthy blood and liver functions, improves digestion and immune system and among others. Pumpkin is also high in antioxidant and carotenoid, which may decrease the risk of certain cancers.
Ingredients:
4 cups of fresh pumpkin cut up in cubes
1 fresh coconut (use meat and water)
1/4 cup raw coconut butter
1 tbs turmeric
1 tsp vanilla extract
1 tsp cinnamon
1/2-1 cup water
1 tbs raw honey (optional)
Cut up coconut; place coconut water in Vitamix or another kind of blender. Scoop out white coconut meat and place in blender; turn on low to mix. Cut up pumpkin and remove skin, then cut in cubes and put in with the coconut water. Turn on high speed and blend the rest of the ingredients. You can use a little bit of raw honey or raw agave to sweeten it.
